Nigari flakes are a natural, refined coagulant extract from Japanese sea salt and are needed for the manufacture of tofu.
In the industrial production they use almost exclusively calcium sulphate (=gypsum) as a coagulant, as the tofu is thereby fixed efficiently.

Each pack contains 150 grams of nigari flakes.
(That's enough for about 38 applications, so it allows you to create up to 9 kg of fresh tofu!)
